Key Ingredients for Almond Flour Sugar Cookies

Creating almond flour sugar cookies is an exciting journey into the world of gluten-free baking. Each ingredient plays a crucial role in crafting a delightful treat that melts in your mouth. Let’s explore what makes these cookies special.

  • Almond Flour: This is the star ingredient, lending a nutty flavor and tender texture. I prefer using finely ground almond flour for a smooth consistency. Unlike regular flour, almond flour keeps the cookies moist and rich.

  • Sugar: A combination of granulated sugar and confectioners’ sugar ensures the perfect sweetness while giving the cookies a lovely crisp on the outside. The confectioners’ sugar adds a subtle creaminess that complements the almond flavor beautifully.

  • Butter: Softened butter creates a luxurious base and brings the cookies together. It’s essential for achieving that melt-in-your-mouth experience!

  • Egg: Just one egg helps bind everything and adds the necessary structure without the gluten. It also gives the cookies a lovely golden hue.

  • Vanilla Extract: A splash of pure vanilla extract elevates the flavor, making the cookies smell and taste heavenly.

  • Baking Soda: This tiny ingredient plays a big part in giving the cookies a slight lift and chewy texture.

Incorporating these elements will undoubtedly lead to delicious almond flour sugar cookies that everyone will love!

Tips for Perfect Almond Flour Sugar Cookies

Baking the perfect almond flour sugar cookies can be a delightful journey filled with experimentation and creativity. With each batch, you can fine-tune your technique for the ultimate sweet treat that melts in your mouth. Here are some tried-and-true tips to help you create cookies that are not just good, but extraordinary.

Choose Quality Almond Flour

Using high-quality almond flour is crucial. Look for finely ground almond flour, as it yields a smoother texture in your cookies. If your flour appears clumpy, give it a little sift before adding it to the mixture. This will ensure even mixing and help prevent dense cookies.

Don’t Overmix the Dough

When combining the ingredients, mix just enough to incorporate them. Overmixing can lead to tough cookies, which defeats the delicate nature that almond flour provides. Gently fold in the ingredients until you see a uniform dough, and then stop!

Chill the Dough

Giving your dough time to chill in the fridge for at least 30 minutes before baking can make a world of difference. Chilling firms up the butter and helps the cookies maintain their shape while baking, resulting in beautifully uniform almond flour sugar cookies.

Pay Attention to Baking Time

Since almond flour can brown faster than regular flour, keep a close eye on your cookies while they bake. Start checking them a minute or two early; you want them just lightly golden around the edges for optimal texture and taste.

By focusing on these tips, you’ll be well-equipped to bake almond flour sugar cookies that impress your friends and satisfy your sweet tooth!

Almond flour sugar cookies are not just a delightful treat; they embody a satisfying blend of nutty flavors and a chewy texture that can brighten any day. If you’ve ever found yourself wondering about this delicious gluten-free dessert, you’re not alone! Here are the answers to some common questions:

Are almond flour sugar cookies gluten-free?

Absolutely! One of the best features of almond flour is that it’s naturally gluten-free. This makes almond flour sugar cookies a fantastic option for anyone following a gluten-free diet. Just be sure to check that your almond flour is certified gluten-free to avoid cross-contamination.

Can I substitute almond flour with regular flour?

While regular all-purpose flour can work in many baking recipes, substituting it for almond flour in sugar cookies won’t give you the same results. Almond flour provides unique moisture and a rich flavor that regular flour lacks. If you have allergies or prefer regular flour, use a 1:1 gluten-free flour blend specifically designed for baking.

How do I store leftover cookies?

To keep your almond flour sugar cookies fresh, store them in an airtight container at room temperature. They can also be refrigerated if you want to extend their shelf life. If you plan to keep them for over a week, consider freezing them! Just make sure to layer parchment paper between cookies to prevent sticking.

The beauty of almond flour sugar cookies lies in their versatility. You can add a variety of mix-ins to elevate their flavors:

  • Nuts: Chopped pecans or walnuts for added crunch.
  • Chocolate Chips: Dark or semi-sweet for a classic touch.

Description

Delicious almond flour cookies that are soft and chewy, perfect for any occasion!

Ingredients

Scale
  • 3 cups (288g) super-fine blanched almond flour
  • 1/4 cup (30g) cornstarch or tapioca starch (we prefer cornstarch; see Note)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, melted and slightly cooled
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • optional: 1/3 cup (53g) sprinkles*
  • 1/2 cup (100g) granulated sugar, for rolling
  • optional: cookie decorating buttercream and sprinkles

Instructions

  1. In a medium bowl, whisk together the almond flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  2. In a large bowl whisk together the melted butter, granulated sugar, and brown sugar until combined. Add the egg, vanilla, and almond extract. Whisk until combined.
  3. Add the dry ingredients to the wet ingredients and mix with a silicone spatula or wooden spoon until fully combined. Fold in the sprinkles, if using. The dough will be very soft. Cover and chill the dough for at least 2 hours (or up to 3 days). Do not skip chilling.
  4. Preheat the oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats (always recommended for cookies). Have ready a small bowl of granulated sugar for coating the cookie dough balls.
  5. Scoop and roll dough into balls, about 1 Tablespoon (28–30g) of cookie dough each. Roll the dough balls in the sugar, and arrange 3 inches apart on the lined baking sheets. Using the bottom of a measuring cup, gently press down on each cookie to slightly flatten.
  6. Bake the cookies for 13–15 minutes, until the surface looks crackly and the edges are set but the centers still look soft. Allow cookies to cool on the baking sheet for 10–20 minutes and then transfer to a cooling rack to cool completely.
  7. If desired, decorate cooled cookies with buttercream frosting and top with sprinkles. For the pictured frosted cookies, I used the Wilton 12 piping tip to swirl buttercream on top of the cooled cookies.
  8. Store unfrosted cookies in an airtight container at room temperature for up to 5 days. Store frosted cookies in an airtight container at room temperature for up to 1 day, or in the refrigerator for up to 5 days.

Notes

  • For best results, make sure to chill the dough as instructed to achieve the perfect texture.
  • Feel free to use any type of sprinkles for decoration or omit them for a classic cookie.
