Description

Delicious chicken skewers marinated in spices and served with a flavorful Bang Bang sauce.


Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 tablespoons sweet chili sauce
  • 12 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • ½ teaspoon garlic powder
  • as desired Chopped green onions
  • as desired Sesame seeds
  • as desired Fresh cilantro

Instructions

  1. Prep the Skewers: If you’re using bamboo skewers, soak them in water for at least 30 minutes to prevent burning. This small step is worth it—no one likes skewers that catch fire!
  2. Marinate the Chicken: In a large bowl, toss the chicken pieces with olive oil, garlic powder, paprika, salt, and pepper. Cover and let sit for 20–30 minutes at room temperature while you prep the sauce.
  3. Make the Bang Bang Sauce: In a mixing bowl, whisk together mayonnaise, Greek yogurt, sweet chili sauce, sriracha, honey, lime juice, and garlic powder. Adjust the heat to your liking—if you’re serving kids, go lighter on the sriracha. Chill the sauce until you’re ready to serve.
  4. Skewer and Cook: Thread the marinated chicken onto skewers. Grill over medium-high heat for 4–5 minutes per side or until nicely charred and fully cooked through. If baking, preheat oven to 400°F and bake on a lined tray for 18–20 minutes, flipping halfway through.
  5. Sauce It Up: Brush the freshly grilled skewers with some of the Bang Bang sauce or serve it on the side for dipping. Sprinkle with green onions, sesame seeds, or chopped cilantro for that perfect finish.
