Description

This healthy recipe combines lean protein and nutritious sweet potatoes for a delicious meal.


Ingredients

  • 1 lb lean ground beef, turkey, or chicken
  • ½ cup yellow onion, diced
  • 1 Tbsp extra virgin olive oil (or avocado oil)
  • 1 Tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp kosher salt (more to taste)
  • ¼ tsp black pepper (more to taste)
  • 1 lb sweet potatoes (2 medium potatoes)
  • 1 Tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp kosher salt (more to taste)
  • ¼ tsp black pepper
  • ¼ cup plain Greek yogurt
  • 1 Tbsp your favorite mayo
  • 1 Tbsp yellow mustard
  • 1 Tbsp ketchup
  • 1 Tbsp dill pickle relish (or sweet pickle relish)
  • ½ Tbsp pickle juice
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp paprika
  • pinch kosher salt & black pepper (optional)
  • 4 cups romaine lettuce, chopped
  • cherry tomatoes (optional)
  • cucumber slices or hamburger dill pickles (optional)
  • red onion, diced (optional)
  • avocado, diced (optional)

Instructions

  1. Preheat the oven to 425℉ (218°C). Line a sheet pan with parchment paper and spray with olive oil spray. Wash and peel your sweet potatoes. On a cutting board, use a sharp knife to cut them into 1 inch cubes.
  2. In a large bowl or directly on the baking sheet, coat the sweet potato cubes with olive oil, kosher salt, pepper, garlic powder, and paprika. Add to the baking sheet in a single layer and bake in the preheated oven for 25-30 minutes. Oven times will vary.
  3. While the potatoes roast, heat a large skillet on medium-high heat. Add olive oil until heated. Lower to medium heat and add the onion. Saute until soft, about 3-4 minutes.
  4. Add the ground meat break it apart with a wooden spoon or masher. Cook for 2-3 minutes until it starts to brown and then add the seasonings, and Worcestershire sauce. Continue to cook until cooked through, about 5-7 minutes.
  5. Make the burger sauce by combining the ingredients in a small bowl and stirring with a whisk or fork.
  6. To assemble the bowls, add the romaine lettuce, meat, sweet potatoes, tomato, red onion, cucumbers or pickles and any other toppings you like. Add the special sauce on top.
  7. Hint: if you have an air fryer, you can make the sweet potatoes in it instead. Preheat your air fryer to 400℉ (200°C) for a couple of minutes. Add your seasoned sweet potato cubes to the air fryer basket in a single layer. Air fry for 10-12 minutes, giving them a good shake about 5 minutes through. Cook time may vary slightly depending on your air fryer.
