Description

Delicious roasted baby red potatoes topped with Parmesan cheese, butter, and garlic.


Ingredients

  • 1 pound baby red potatoes
  • 1/2 cup unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons minced garlic or 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place butter on a rimmed baking sheet and let it melt in the oven.
  3. Once melted, remove the pan and evenly sprinkle Parmesan, garlic, Italian seasoning, salt, pepper, and red pepper flakes over the butter.
  4. Rinse and dry the potatoes. Cut any larger ones in half to match size.
  5. Place potatoes cut-side down into the butter mixture. Press gently.
  6. Roast for 35–45 minutes until tops are fork-tender and bottoms are crispy and golden.
  7. Let potatoes rest for 5 minutes before removing to allow the cheese layer to set.
  8. Serve hot with extra Parmesan or fresh herbs, if desired.
