Ingredients

  • 1 can (14 oz) full-fat coconut milk
  • 1 cup bell peppers (mixed colors), sliced
  • 3 cloves garlic, minced
  • 1 inch piece fresh ginger, minced
  • Juice of 2 limes
  • ¼ cup fresh herbs (cilantro or parsley), chopped
  • 1 Scotch bonnet pepper (optional)
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the bell peppers, garlic, and ginger.
  2. In a large skillet over medium heat, add olive oil and sauté garlic and ginger for about 2 minutes until fragrant.
  3. Add sliced bell peppers and cook for an additional 3 minutes until slightly softened.
  4. Stir in coconut milk, soy sauce, and lime juice. Bring the mixture to a gentle simmer.
  5. Gently place fish fillets into the simmering liquid and cover the skillet. Poach for 5-8 minutes until cooked through.
  6. Before serving, sprinkle with fresh herbs for added flavor and presentation.

Notes

  • For an extra kick, you can leave the Scotch bonnet pepper whole while cooking and remove it before serving.
