Delicious and easy lemon garlic chicken pasta, perfect for a quick weeknight dinner.
Ingredients

- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1/2 cup fresh lemon juice (about 2 lemons)
- 1 cup low-sodium chicken broth
- 8 oz cremini or button mushrooms, sliced
- 8 oz spaghetti or fettuccine
- 2 tbsp capers, drained
- 3 tbsp olive oil
- 2 tbsp butter
Instructions
- Prepare your ingredients and bring a pot of salted water to boil for pasta.
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper; sear until golden brown on both sides (about 3 minutes each). Remove from skillet.
- In the same skillet, melt butter and sauté garlic until fragrant (~1 minute). Add sliced mushrooms; cook until tender.
- Pour in chicken broth, lemon juice, and capers. Scrape up any browned bits and drain while reserving some pasta water.
- Serve pasta topped with chicken and sauce.
