- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1 cup tomato sauce
- 3/4 cup frozen corn
- 3/4 cup frozen peas
- 1 red bell pepper, diced
- 3/4 cup salsa
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream, for topping
- 1 avocado, diced, for topping
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef over medium-high heat until browned. Drain excess fat.
- Add onion and garlic, and cook until soft and fragrant, about 4–5 minutes.
- Stir in taco seasoning and tomato sauce. Simmer for 5 minutes.
- Mix in corn, peas, and red bell pepper. Cook until vegetables are tender, about 4–5 minutes.
- Transfer mixture to a baking dish. Spread salsa evenly over the top.
- Sprinkle shredded cheddar cheese generously over the surface.
- Bake for 15–20 minutes, or until cheese is melted and bubbly.
- Let casserole rest for 5 minutes.
- Top with sour cream, diced avocado, and fresh cilantro before serving.
