Ingredients

  • 4 cups (350g) shredded cabbage (green or purple mix)
  • 2 apples (360g) (Granny Smith or Honeycrisp), sliced into matchsticks
  • 1/2 cup (60g) shredded carrots
  • 1/4 cup (25g) green onions, sliced
  • 1/4 cup (60ml) olive oil
  • 2 tbsp (30ml) lime juice
  • 1 tbsp (21g) honey
  • 1 tsp (3g) poppy seeds (optional)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded cabbage, apple matchsticks, carrots, and green onions. Toss gently to combine.
  2. In a small jar, whisk together the olive oil, lime juice, honey, poppy seeds (if using), salt, and pepper until well combined and emulsified.
  3. Just before serving, pour the dressing over the salad ingredients.
  4. Toss well to coat every piece evenly.
  5. Serve immediately for maximum crunch and best flavor.
