- 4 cups (350g) shredded cabbage (green or purple mix)
- 2 apples (360g) (Granny Smith or Honeycrisp), sliced into matchsticks
- 1/2 cup (60g) shredded carrots
- 1/4 cup (25g) green onions, sliced
- 1/4 cup (60ml) olive oil
- 2 tbsp (30ml) lime juice
- 1 tbsp (21g) honey
- 1 tsp (3g) poppy seeds (optional)
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded cabbage, apple matchsticks, carrots, and green onions. Toss gently to combine.
- In a small jar, whisk together the olive oil, lime juice, honey, poppy seeds (if using), salt, and pepper until well combined and emulsified.
- Just before serving, pour the dressing over the salad ingredients.
- Toss well to coat every piece evenly.
- Serve immediately for maximum crunch and best flavor.

- This salad can be prepared ahead of time, but it’s best served fresh to maintain the crunch.
