This colorful Easter dessert is a delightful mix of flavors and textures, perfect for spring celebrations.

- 1 (3 oz) box instant vanilla pudding mix
- 1 (20 oz) can crushed pineapple (do NOT drain)
- 1/2 cup sour cream
- 1 (8 oz) container whipped topping (thawed)
- 2 cups pastel mini marshmallows or bunny marshmallows
- 1 cup mandarin orange segments, very well drained and patted dry
- 1/2 cup maraschino cherries, drained extremely well and halved
- 1/2 cup sweetened shredded coconut
- Pink, yellow, and green food coloring
- Extra marshmallows for topping
- Mandarin segments for garnish
- Easter candy eggs
- Bunny candy toppers
Instructions
- In a large bowl, combine the vanilla pudding mix and crushed pineapple. Mix well until smooth.
- Fold in the sour cream and whipped topping until combined.
- Gently stir in the mini marshmallows, mandarin oranges, maraschino cherries, and shredded coconut.
- Divide the mixture into serving dishes and refrigerate until set.
- Before serving, add food coloring as desired and top with extra marshmallows, mandarin segments, Easter candy eggs, and bunny candy toppers.
Notes
- This dessert is great for Easter parties and can be customized with different toppings!
