- 4 ounces unsweetened baking chocolate, melted and cooled
- 2 teaspoons vanilla extract
- 4 large eggs (preferably pasteurized)
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar (for whipped topping)
- 1 pre-baked 9-inch pie crust (flaky, graham, or Oreo)
- 2 tablespoons chocolate shavings (optional garnish)
Instructions
- Melt the unsweetened chocolate in a heatproof bowl using the microwave or a double boiler. Set aside to cool.
- In a mixing bowl, beat softened butter and granulated sugar on high speed until light and fluffy, about 3-5 minutes.
- Mix in the cooled chocolate and vanilla extract until smooth.
- Add eggs one at a time, beating for at least 3 minutes after each addition (12 minutes total). The mixture will become thick and glossy.
- Spoon the chocolate filling into the cooled, pre-baked pie crust. Smooth the top and refrigerate for at least 4 hours or overnight until fully set.
- In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
- Spread or pipe the whipped cream over the chilled pie.
- Garnish with chocolate shavings, if desired.
- Slice with a warm knife for clean edges. Serve chilled.
