- 4 medium russet potatoes
- 3 tbsp olive oil
- 4 cloves fresh garlic, minced
- 1 cup grated parmesan cheese
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the russet potatoes, then cut them into thick wedges (about eight per potato).
- Soak the potato wedges in cold water for at least 30 minutes to remove excess starch.
- Drain and dry the wedges thoroughly before tossing them in a large bowl with olive oil, minced garlic, oregano, salt, and pepper until well-coated.
- Sprinkle grated parmesan cheese over the seasoned wedges and toss again.
- Arrange the wedges in a single layer on a baking sheet and bake for 30-35 minutes until golden brown and crispy, turning halfway through.
- Serve hot and enjoy!

- For extra crispiness, make sure to dry the potato wedges well after soaking.
