A delicious Mediterranean-inspired dish combining marinated chicken, pasta, and a refreshing tzatziki sauce.
Ingredients

- 3–4 boneless, skinless chicken breasts
- 1 cup full-fat Greek yogurt
- 1 medium cucumber, diced
- 3 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 8 oz penne or fusilli pasta
- Juice of 1 lemon
- 2 tbsp fresh dill or parsley, chopped
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, and dill. Add chicken breasts and marinate for at least 30 minutes.
- Cook the Pasta: Boil salted water in a large pot. Cook pasta according to package instructions until al dente. Drain and set aside.
- Sear the Chicken: Heat olive oil in a skillet over medium heat. Cook marinated chicken for 6-7 minutes on each side until golden brown and cooked through. Slice into strips.
- Prepare Tzatziki Sauce: Mix Greek yogurt, diced cucumber (drained), minced garlic, lemon juice, salt, and dill in a bowl until smooth.
- Assemble the Dish: In a large bowl, combine sliced chicken with pasta. Drizzle tzatziki sauce over the top and mix gently.
- Garnish and Serve: Top with fresh herbs or feta cheese if desired. Serve warm or chilled.
Notes
- For a low-carb version, substitute pasta with zucchini noodles.
