Description

A delicious Mediterranean-inspired dish combining marinated chicken, pasta, and a refreshing tzatziki sauce.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, diced
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 8 oz penne or fusilli pasta
  • Juice of 1 lemon
  • 2 tbsp fresh dill or parsley, chopped

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, and dill. Add chicken breasts and marinate for at least 30 minutes.
  2. Cook the Pasta: Boil salted water in a large pot. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. Sear the Chicken: Heat olive oil in a skillet over medium heat. Cook marinated chicken for 6-7 minutes on each side until golden brown and cooked through. Slice into strips.
  4. Prepare Tzatziki Sauce: Mix Greek yogurt, diced cucumber (drained), minced garlic, lemon juice, salt, and dill in a bowl until smooth.
  5. Assemble the Dish: In a large bowl, combine sliced chicken with pasta. Drizzle tzatziki sauce over the top and mix gently.
  6. Garnish and Serve: Top with fresh herbs or feta cheese if desired. Serve warm or chilled.
