Description

Juicy chicken thighs marinated in a zesty olive oil and lemon mixture, baked to golden perfection.


Ingredients

  • 1/4 cup Olive Oil
  • 2 tablespoons Lemon Juice (Freshly squeezed)
  • 4 cloves Garlic (Minced)
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt (Or to taste)
  • 1/2 teaspoon Black Pepper
  • 4 pieces Bone-in, skin-on chicken thighs (Or breasts, if preferred)
  • 2 tablespoons Fresh Parsley (Chopped, optional for garnish)

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they’re well coated. Marinate for at least 30 minutes or up to two hours in the fridge.
  3. Preheat your oven to 375°F (190°C).
  4. Place the marinated chicken in a baking dish, skin side up, and bake for 35-40 minutes until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  5. Allow the chicken to rest for about 5 minutes before serving. Garnish with fresh parsley if desired.
