- 1/4 cup Olive Oil
- 2 tablespoons Lemon Juice (Freshly squeezed)
- 4 cloves Garlic (Minced)
- 2 teaspoons Dried Oregano
- 1 teaspoon Paprika
- 1 teaspoon Salt (Or to taste)
- 1/2 teaspoon Black Pepper
- 4 pieces Bone-in, skin-on chicken thighs (Or breasts, if preferred)
- 2 tablespoons Fresh Parsley (Chopped, optional for garnish)
Instructions
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create the marinade.
- Add the chicken pieces to the marinade, ensuring they’re well coated. Marinate for at least 30 minutes or up to two hours in the fridge.
- Preheat your oven to 375°F (190°C).
- Place the marinated chicken in a baking dish, skin side up, and bake for 35-40 minutes until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Allow the chicken to rest for about 5 minutes before serving. Garnish with fresh parsley if desired.

- For best results, marinate the chicken overnight.
- Serve with a side of roasted vegetables or a fresh salad.
