Description

A delicious grilled eggplant recipe with garlic and optional balsamic vinegar.


Ingredients

  • 2 medium eggplants (about 1 lb total)
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic (minced)
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Wash and dry the eggplants. Slice them into thick rounds, about 1 inch thick.
  2. In a large bowl, combine sliced eggplants with olive oil, minced garlic, salt, and pepper. Toss until evenly coated.
  3. Preheat the grill to medium-high heat (400°F / 200°C) and lightly oil the grates.
  4. Grill eggplant slices for 4-6 minutes on each side until charred and tender.
  5. Optional: Drizzle with balsamic vinegar before serving.

Notes

  • For best results, let the eggplant sit in the oil and seasoning for 15-30 minutes before grilling.
  • Make sure the grill is well-oiled to prevent sticking.
