Deliciously fudgy brownies made with cottage cheese and almond flour, perfect for a guilt-free treat!

- 227g cottage cheese
- 2 large eggs
- 1 teaspoon vanilla extract
- 60g almond flour
- 30g unsweetened cocoa powder
- 80g granulated erythritol
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 50g sugar-free chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper. Lightly grease it.
- In a blender or food processor, blend cottage cheese, eggs, and vanilla extract until smooth.
- In a bowl, mix almond flour, cocoa powder, erythritol, baking powder, and salt.
- Pour the wet mixture into the dry ingredients. Stir until just combined. Fold in chocolate chips.
- Pour batter into the prepared dish and smooth the top. Add extra chocolate chips if desired.
- Bake for 25–30 minutes, or until center is set but slightly soft.
- Cool completely before slicing. Store in fridge for a fudgier texture.
Notes
- These brownies can be stored in the refrigerator for up to a week.
- For a richer flavor, add a pinch of espresso powder to the batter.
