Description

Ingredients

  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the sliced carrots and trimmed green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Spread the vegetable mix in a single layer on a baking sheet.
  4. Roast for about 20-25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized, and the green beans are tender-crisp.
  5. Remove from the oven and transfer the veggies to a serving dish.
  6. Garnish with chopped fresh parsley and serve immediately.
