- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the sliced carrots and trimmed green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
- Spread the vegetable mix in a single layer on a baking sheet.
- Roast for about 20-25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized, and the green beans are tender-crisp.
- Remove from the oven and transfer the veggies to a serving dish.
- Garnish with chopped fresh parsley and serve immediately.
Notes
- For added flavor, you can sprinkle some garlic powder before roasting.
