- 1 pound fresh scallops
- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the scallops under cold water and pat them dry thoroughly with paper towels.
- Heat a large skillet over medium-high heat and add the butter and olive oil until melted and shimmering.
- Place the scallops in the hot pan without overcrowding. Sear for 2-3 minutes on each side until golden brown.
- Once browned, add minced garlic to the pan and cook briefly until fragrant.
- Squeeze fresh lemon juice over the scallops before removing from heat.
- Plate immediately and garnish with fresh herbs if desired.

- Ensure that the scallops are patted dry for a better sear.
- Do not overcrowd the pan to achieve a nice golden crust.
