Description

A delicious blueberry biscuit bake that is perfect for dessert or a sweet breakfast!


Ingredients

Scale
  • 6 cups blueberries
  • 1/4 cup allulose
  • 1 tablespoon cinnamon
  • 1 teaspoon xanthan gum
  • 2 teaspoons lemon juice
  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar free brown sugar
  • 2 tablespoons allulose
  • 1 large egg
  • 3 tablespoons butter
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 180C/350F. Grease a baking dish and set aside.
  2. Mix together your fruit filling ingredients until combined. Bake for 10-15 minutes.
  3. While baking, prepare the biscuit topping.
  4. In a large mixing bowl, whisk together the dry ingredients. Add the egg, melted butter, and heavy cream and mix until combined.
  5. Remove the baking dish from the oven. Using a cookie scoop or ¼ cup, scoop out portions of the biscuit topping over the top of the blueberries.
  6. Bake again for 15-20 minutes, or until golden brown.
  7. Remove from the oven and let sit for 5 minutes, before serving.

Notes

  • This recipe can be made with fresh or frozen blueberries.
  • Adjust sweetness to taste by adding more or less sugar substitute.
