Instructions
- Preheat your oven to 400°F (200°C) and grease a 9-inch cast iron skillet or baking dish.
- In a large mixing bowl, whisk together the cornmeal, flour, baking powder, and salt.
- In another bowl, combine the milk, eggs, and oil. Whisk these wet ingredients together until well-blended.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined.
- Fold in the shredded cheese, chopped bell peppers, green onions, and paprika (if using).
- Transfer the batter into the greased skillet or baking dish.
- Spread the batter evenly and bake in the preheated oven for 20-25 minutes or until golden.
