- 1 ½ cups shredded Monterey Jack cheese
- 1 ½ cups shredded cheddar cheese
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Drain and set aside.
- Sauté the Vegetables: In a large skillet over medium heat, warm the olive oil. Add the chopped onion and green bell pepper. Sauté until softened and fragrant—about 5–7 minutes.
- Mix the Creamy Sauce: Reduce the heat to low. Add the diced tomatoes with green chilies (with their juices), cream of chicken soup, cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Stir until the cream cheese has melted and the mixture is smooth and creamy.
- Combine Chicken and Pasta: Stir in the cooked chicken and cooked spaghetti until everything is evenly coated with the creamy sauce.
- Assemble the Casserole: Preheat your oven to 350°F (175°C). Transfer the mixture to a lightly greased 9×13-inch baking dish. Sprinkle the Monterey Jack and cheddar cheese evenly over the top.
- Bake to Perfection: Bake uncovered for 25–30 minutes, or until the cheese is melted, bubbly, and golden around the edges.
- Serve Warm: Let the casserole sit for about 5 minutes before serving. The cheesy layers settle beautifully, making each slice hearty and satisfying.
