- 1/2 cup extra virgin olive oil
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a mixing bowl, whisk together the fresh orange juice, zest, olive oil, eggs, and vanilla until fully combined.
- In another bowl, combine the flour, sugar, and baking powder; mix well.
- Gently fold the dry ingredients into the wet mixture until just combined—do not overmix.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving.
