Ingredients

  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a mixing bowl, whisk together the fresh orange juice, zest, olive oil, eggs, and vanilla until fully combined.
  3. In another bowl, combine the flour, sugar, and baking powder; mix well.
  4. Gently fold the dry ingredients into the wet mixture until just combined—do not overmix.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar before serving.
