Ingredients

- 3–4 lbs chuck roast
- 4 medium carrots, diced
- 4 medium Yukon Gold or red potatoes, diced
- 2 medium onions, chopped
- 2 cups low-sodium beef broth
- 4 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear each side until golden brown.
- Remove the roast from the skillet and sauté onions and garlic until translucent.
- Place the seared roast in the slow cooker and surround it with carrots and potatoes.
- Pour beef broth over the ingredients and add thyme and rosemary on top.
- Cover and cook on low for 8 hours or until the meat is fork-tender.
Notes
- For best results, sear the roast to enhance the flavor.
- Feel free to add other vegetables like celery or turnips for extra flavor.
