Description

A delicious slow-cooked chuck roast with tender vegetables and savory flavors.


Ingredients

  • 34 lbs chuck roast
  • 4 medium carrots, diced
  • 4 medium Yukon Gold or red potatoes, diced
  • 2 medium onions, chopped
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear each side until golden brown.
  2. Remove the roast from the skillet and sauté onions and garlic until translucent.
  3. Place the seared roast in the slow cooker and surround it with carrots and potatoes.
  4. Pour beef broth over the ingredients and add thyme and rosemary on top.
  5. Cover and cook on low for 8 hours or until the meat is fork-tender.

  • For best results, sear the roast to enhance the flavor.
