Ingredients

- 4 cups diced potatoes
- 1 cup chopped onion
- 2 cups chopped carrots and celery (optional)
- 4 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 4 tablespoons butter
- to taste salt and pepper
- 2 teaspoons thyme or preferred herbs
- 1 cup milk, half-and-half, or cream
- 1 cup shredded cheese (optional)
Instructions
- Add potatoes, onion, carrots, celery, garlic, broth, butter, and seasonings to the crock pot.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours until the potatoes are tender.
- Mash a portion of the potatoes to thicken the soup.
- Stir in milk or cream and cheese until fully melted.
- Adjust seasoning and serve warm.
Notes
- This soup can be made with various herbs according to your preference.
- For a thicker soup, mash more potatoes to your desired consistency.
