Description

A comforting and creamy potato soup cooked in a crock pot for a hassle-free meal.


Ingredients

Scale
  • 4 cups diced potatoes
  • 1 cup chopped onion
  • 2 cups chopped carrots and celery (optional)
  • 4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 4 tablespoons butter
  • to taste salt and pepper
  • 2 teaspoons thyme or preferred herbs
  • 1 cup milk, half-and-half, or cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Add potatoes, onion, carrots, celery, garlic, broth, butter, and seasonings to the crock pot.
  2. Cook on LOW for 6–7 hours or HIGH for 3–4 hours until the potatoes are tender.
  3. Mash a portion of the potatoes to thicken the soup.
  4. Stir in milk or cream and cheese until fully melted.
  5. Adjust seasoning and serve warm.

Notes

  • This soup can be made with various herbs according to your preference.
  • For a thicker soup, mash more potatoes to your desired consistency.
