- 1 lb (450g) lean ground beef
- 2 medium (approx. 500g) sweet potatoes, peeled and diced small
- 1 (approx. 150g / 1 cup) onion, diced
- 1 (approx. 150g / 1 cup) bell pepper, chopped
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 cup (120ml) beef broth
- Fresh parsley for garnish
Instructions
- Brown the ground beef in a large skillet over medium-high heat, breaking it apart with a wooden spoon. Cook until fully browned, then drain excess fat.
- Add the diced sweet potatoes, onion, and bell pepper to the skillet. Stir in the garlic powder, paprika, cumin, salt, and pepper, cooking for about 1 minute until fragrant.
- Pour in the beef broth. Bring to a gentle simmer, then reduce heat to medium-low, cover, and simmer for 10–12 minutes, or until the sweet potatoes are tender.
- Uncover the skillet and cook for 2 more minutes over medium-high heat to let any remaining liquid reduce and flavors concentrate. Taste and adjust seasoning as needed.
- Garnish generously with fresh parsley and serve warm.
