- 3–4 pounds chuck roast
- 3 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch (optional)
Instructions
- Season the chuck roast generously with salt and pepper on all sides.
- Heat a skillet over medium-high heat and sear the roast until browned on all sides.
- Remove the roast and melt butter in the same skillet. Add sliced onions and cook until caramelized.
- Add minced garlic and cook for about one minute until fragrant.
- Place the roast in the slow cooker and top with the caramelized onions and garlic.
- Pour beef broth, Worcestershire sauce, balsamic vinegar, and thyme around the roast.
- Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours until fork-tender.
- Optional: Mix cornstarch with water and stir into the juices to thicken the sauce.
- Shred the beef with two forks and mix with the onions and sauce before serving.
Notes
- For best results, use a good-quality chuck roast.
- This dish pairs well with mashed potatoes or crusty bread.
