Description

Deliciously soft and fluffy strawberry cinnamon rolls, perfect for breakfast or dessert!


Ingredients

Scale
  • 3 cups (360g) plain flour
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/2 tsp salt
  • 3/4 cup warm milk
  • 1/4 cup (60g) unsalted butter, melted
  • 1 large egg, room temp
  • 1 heaping cup (160g) diced fresh strawberries
  • 1/2 cup (100g) brown sugar
  • 2 tsp ground cinnamon
  • 3 tbsp (40g) unsalted butter, softened, for filling
  • 1 cup (120g) powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Bloom the yeast: In a big bowl, stir the warm milk and 1 tbsp sugar. Sprinkle yeast in, walk away 5 min, come back. It should look foamy—if not, well, sigh, try again with fresher yeast.
  2. Mix the dough: Dump in the rest of the sugar, melted butter, egg, and salt. Stir. Add flour a bit at a time, mixing after each addition. If it’s sticky, don’t panic, add a bit more flour—dough should be soft but not glue-like.
  3. Knead, sort of: Flour your hands and knead dough in the bowl or on the counter for about 5–8 minutes. Shape into a ball, plop into a greased bowl, cover with a tea towel.
  4. Spread softened butter all over. Sprinkle over brown sugar, cinnamon, then scatter diced strawberries.
  5. Roll up tightly (lengthwise), pinching the seam. Slice into roughly 12 rolls, about 1 inch thick.
  6. Arrange rolls, swirl side up, in a greased 9×13-inch pan. Cover and let puff up for 30–45 minutes. Preheat oven to 350°F (175°C).
  7. Bake: Pop them in for 22–26 minutes, until golden and bubbling at the edges.
  8. While they bake or cool a little, whisk up powdered sugar, milk, and vanilla. Drizzle or slather over warm rolls.

Notes

  • You can substitute half of the plain flour with whole wheat flour for a healthier version.
  • Brown sugar can be used instead of granulated sugar for a more rustic flavor.
  • If using frozen strawberries, ensure they are drained well to avoid sogginess.
