Description

This banana bread is moist and delicious, perfect for breakfast or as a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup sugar cookie mix (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time and mix in the vanilla extract.
  5. Whisk together flour, baking powder, and salt in a separate bowl; gradually add this to the wet mixture until just combined.
  6. Fold in the mashed bananas and optional sugar cookie mix.
  7. Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  8. Allow to cool before slicing.

Notes

  • For added flavor, you can stir in chopped nuts or chocolate chips.
  • If using frozen bananas, make sure to thaw and drain excess liquid before mashing.
